QUICK, EASY AND DELICIOUS!
I know, I know, nothing beats your great grandma’s 100 year old chocolate chip cookie recipe, but if you’re lactose intolerant, vegan or just looking for something that is quick, easy and won’t leave you feeling guilty I’ve got your answer. Even the meat and dairy loving boyfriend gives these dairy-free cookies his seal of approval.
THREE INGREDIENTS, 15 MINUTES AND YOU’RE ON YOUR WAY TO SOFT, MELTED CHOCOLATE GOODNESS.
Read on to find out how to make these super quick and easy dairy-free chocolate chip cookies.
First, gather your ingredients (see above).
Preheat your oven to 350°F with rack centered. Then mush your banana in a medium sized bowl. Add oats until well combined. Add dairy-free chocolate chips until evenly distributed (if you’re okay with dairy, feel free to use regular chocolate chips).
OPTIONAL: Mix in a third ingredient, such as sliced almonds, coconut flakes, walnuts, dried fruit, vanilla, cinnamon or whatever your heart desires.
Place heaping tablespoons full onto a greased baking sheet, and bake for 15 minutes or until lightly browned on the bottom. I like to line my cookie sheet with aluminum foil or parchment paper; this does not affect the flavor and makes cleanup a breeze.
Once done, remove cookies from the oven and let cool on the baking sheet for a few minutes before diving in. They’re best enjoyed fresh out of the oven with a glass of milk (almond/coconut/soy/dairy…whatever floats your boat), but I’ve been known to save one or two to eat for breakfast the next morning.
